Day 3: We drive to Mekong Delta and eat at Lan Que.
First course is spring rolls fried but the rice shell is a mesh, dont know how they made it but they were awesome, followed with an eel dish spicy with mushrooms, very tender. Next are a small bird, not sure what kind, strong taste and texture comes alive (saved:>) with a dipping sauce of
crushed pepper and lime, following that we have a fish that lookes like it came from the bottom of the river (the Mekong feels a bit like the Amazon, the town is a cool backwater place, the people so friendly, just 30 years ago the US was spraying napalm here), it was sweet but strong textured.
Than comes the snake, sauted with a bitter green, shallots, peanuts, this dish is eaten with a thin flat bread, like an Indian bread, cooked with spices in it, you dip it in the mixture and eat, its supposed to be good for your body, last dish is snake bone broth soup with cilantro and shallots.
Could not do the turtle which is another special of the restaurant. Interesting meal. Dinner we needed some pro-flow veggie food, so we went to a local tourist hot-spot called Lemongrass. It was more Thai/Chinese but the food was clean
and what we needed.

Day 7: Continue boat trip towards LaiChau Town. In the afternoon arrive in LaiChau. Transfer to guest house. Picnic lunch, Dinner and over night [B,L,D}
Day 8: Overland drive to SaPa. Great scenery along the road, passing residences of different ethnic groups such as Red H’Mong, Black Dzao, Lu, White H’Mong etc. Cross the highest in Vietnam Mountain Pass. Lunch at local restaurant en route. Check in hotel in SaPa. [B]
Day 9: Day walk to villages of the Black H’Mong. Lunch and dinner in town. Overnight in hotel. [B]
Day 10: Overland drive to HaNoi. Lunch en route. Check in hotel. At leisure. [B,L]
Day 11: AM: Drive to HaLong Bay. Load the boat for cruising through magnificent HaLong Bay to HaLong City. Visit a cave. Swimming. Lunch and dinner aboard the boat. Sleep on boat. [B,L,D]
Day 12: AM: Arrive a small wharf. Start 18 km walking from VietHai village through the rain forest of CatBa National Park to where the bus awaits. Transfer down town. Check in hotel. PM: Free at leisure. [B,L]

I'd go with Vietnam Fantasy over the other two. It seems like it offers more, and note that Vietnam Adventure and Green Trail are the same tours under different names, which seems fishy. It's good to have a lot of choices, though.
I wonder if they offer a mine field tour for the more adventurous traveler?
