1* Michelin in south Spain.....they use a lot of plankton.....her was the plankton risotto and the other a plankton glob under a re constructed seafood

the glob was strong but went well with the Sherry, the Risotto rocking grand cru (tiny clams in it).......sorry algae not plankton
