this little japanese fast food stand opened in essex market. i just grabbed the fried chicken slider which was pretty good but the goto is their cabbage-infused pancake sliders w/a variety of meat fillings. tough sell at that market since it closes so early. they get no dinner service and theres just not enough traffic. nice couple that run it.

the american cheese seems like an uninspired choice but otherwise will investigate further.
American cheese is an odd choice. Dewey uses it for some sandwiches. I guess its an americana nostalgia choice -- hipster, like PBR and French's mustard. I like Cabot seriously sharp for most everything. But it turns oily when heated and american just sort of morphs from a solid to a thick liquid.
Both Dewey and Wylie like American cheese and say they like it for the flavor and texture. They do say it's "comforting" so I guess you could call that nostalgia.
its funny stuff. thankfully as a household we didn't use it. We had the vastly superior Kraft Cheese cheddar. I don't disagree that american cheese has its applications and can be really great

Kraft chunk cheddar was pretty much the best choice there was in grocery stores or supermarkets in the 60's and it was one of the only sharp cedars available. I don't think there were other options till we moved to NY. It wouldn't be my first choice now with Cabot available everywhere. The east village cheese shop blew the choices wide open. I think its funny that Dewey and Wiley use american and I'm sure it tastes great. on the other hand what else would you use on a tuna melt but american. (I've never had a tuna melt by choice.) and theres also that liquid stadium cheese for nachos and cheese fries. woof!
