It may not be a true steam process, but there is certain evaporation. It also stands the chicken well on the grill. I don't know how you would grill a whole chicken otherwise. I get the beer can debunking info, but they do turn out great (crispy skin and moist interior) at I would contend little health
risk. And as you say, it screams BBQ all the way to the finish. Coffee ground rub. With couscous, BBQ corn in husk, sliced garden tomatoes. + O & V
