(this is the only internet ref to Sir John i could find) The Shetland Smokehouse were not represented by the formidable Hammonds this year due to other commitments, but their American agent Sir John Wincroft was a bit of a class act and added his own 'flavour' to the stand. It is always an attraction at an exhibition if there is something to taste and even more so when it involves a blind taste test. Sir John was slicing up two smoked fillets, one a Shetland salmon smoked in Skeld, the other a Shetland salmon smoked in the Catskill Mountains of New York State. The verdict from most was a clear preference for the Shetland smoked version, and an even more decisive vote came on the final day when a buyer who had sampled all of the smoked salmon on offer throughout returned to give Sir John the nod.
Years later I would like to hear from 'Skinny'. We are still trying to make a difference in the smoked fish market.
